Making a great Chicken Fry! If you've heard the song and wondered, this is for you!

Preparing the Meat
Grab some saltine crackers and crush them, fairly coarse, not too fine, put these in a flat cake pan. In a mixing bowl mix three eggs, beaten, add 2 cups of milk and mix.
I use approximately 1/2 pound pieces of minute steak. Immerse the minute steak in the milk/egg mixture, set it on top of the cracker crumbs, and press, turn over and do on the other side, pressing crumbs into the meat.
At my restaurant I use a flat griddle, you can duplicate this at home one of two ways, either an electric griddle, set at about 375 degrees or a cast iron skillet. Pour a small amount of cooking oil in the pan, heat add the chicken fry, drizzle the top with melted butter, allow to cook until medium brown, flip and repeat.
